I made fajita quesadilla for myself today. I had some bell peppers that were getting old, and for some reason have lots of soft tortillas, so it was a no-brainer.
I’ve been battling some weird gastro bug that resulted in me not being able to keep food down for over two weeks. It was also accompanied by itching all over but no rash, and bruising on my legs.
But, today appears to be the first day I can eat normal food!
So far I’ve had coffee with milk and vanilla creamer (it’s almost 3 weeks since I’ve had coffee or dairy), followed by a slice of white bread with peanut better, and for lunch I had a sandwich with mortadella and capicollo followed by apple and pomegranate apple sauce.
I am so sorry you were sick, but I bet that white bread with PB tasted like heaven!
Yesterday I took my Mom to a retirement party, the company was lovely and it was a good vibe, but that food was awful. My stuffed red peppers had ONE flavor…salt.

My food this week has been mediocre at best (cucumber cream cheese sandwich for lunch every day, with yogurt, leftover cucumber slices, a banana and apple cake). Dinner was roasted chicken and potatoes/carrots/onion/garlic, except for the day I had pasta.
Work has been insane and I haven’t been feeling well afterwards, so mostly just work>eat>sleep>repeat.
However, for Easter today, my contribution to our dinner was Easter bread and maple dijon glazed ham. Photos of the bread and my dinner:
We’ve got Taco Bar with Mexican corn as a side today in the Cafe. Also an option is a portobello sandwich with fresh mozzarella, Roasted Red Peppers, and a balsamic Glaze. And the grill special is Honey BBQ Chicken Wings
I will have a slice of Italian Olive bread from the Farmer’s Market. This particular loaf was frozen. Our Farmer’s Market is every other week until it moves back outdoors. My daughter sent me a tik tok explaining how to revitalize a frozen loaf of sourdough bread and I did it for the first time the other day. You thaw it overnight on the counter, run water over it, slice it (I just sliced it in half) and bake it at 350 for 45 minutes. It turned out great! Anyway, I’ll have a couple slices of hard salami, some Kalamata olives, carrots and a sliced tomato, along with some white cheddar cheese.
Lunch today consisted of oatmeal along with some vanilla/chocolate yoghurt.
Tomorrow is Friday and that means it’s [pizza night complete with my favorite soda Vanilla Coke.,
I love vanilla coke! I’m not really a pop person, or carbonated beverage of any kind person, but vanilla and vanilla-cherry coke are the exceptions. Where I live, they can be quite hard to find, so it’s always a real treat.
